Fat-free? You're looking at something swiss-roll based Swiss (jelly) roll. Pavlova is a possibility, but you'd need to layer it with something like frozen yoghurt and fruit rather than cream. To decorate, fruit, glace icing, sugarpaste or royal icing are all fine - just steer clear of the buttercream and chocolate ganache!
Sugar free? Here we have a problem. If you try to substitute with sweeteners in a cake it doesn't really work. You can get away with using one of the 50/50 style sweeteners which is part sugar, part sweetener but the sugar forms a necessary part of the mixture for a successful cake. That being said, a yeast based cake will work for you quite well - but I don't have a recipe at the moment. I'll experiment and get back to you!. To finish the cake you have few choices. Sugarfree chocolate (although watch out for after-effects!) or high cocoa chocolate would work - in a ganache if you want the frosting look. If you're OK with fruit then a heaping of strawberries, perhaps glazed with some gelatine is pretty. For some cakes, sweetened cream cheese (eg. marscapone) would work - especially with a coffe cake for a tiramisu style
Dairy-free? No problem - use any of the recipes, and substitute soymilk for normal milk and a non-dairy margarine for the butter. You need to ensure that your margarine is OK for baking (it'll say on the tub). You can also normally get away with using oil in place of butter, but it can create a heavier cake if the recipe wasn't intended to be used that way. The Pandan Chiffon cake is designed to use oil however, and it gives you a beautiful light, fluffy cake. If you don't like (or don't have) pandan flavouring then try orange or lemon instead and it'll be delicious. The secret is the whipped egg whites which give more lift to the cake. Icing-wise you're fine too - no ganache, but royal icing, glace icing, frosting - you can use all of these.
