Jam is a very useful substance when it comes to cake decorating. Besides its obvious use as a filling, Jam can also be used as a glue to hold cake pieces together, and directly for decorating the cake.

For glue purposes you're best off picking a relatively mild flavour such as apricot jam, and water it down 50/50 with hot water.

You'll find the work of applying cake covering a lot less sticky if you brush the jam onto the cake using a pastry brush, rather than onto the marzipan or sugarpaste itself.
