Chocolate Ganache is a beautiful soft icing. Use both for layering and covering or even eat on its own as a pudding. Add a dash of Kirsch or Brandy for that extra touch of taste.
Fruitcake. Classic for weddings and christmas as it keeps very well. Some people even keep the top layer of their wedding cake to re-ice for their first child's christening.
